New Family Favorite!

This morning I woke up with one thing on my mind: something warm, cozy, and apple-filled. I was craving a dump-cake-style breakfast — but make it protein-packed. So I decided to try something new using one of my pantry staples: Kodiak pancake mix.

I’m not a recipe developer by trade, so naturally, I turned to my tech bestie, ChatGPT, for help. I told it what I had in mind — apples, cozy spices, and a simple prep — and it gave me the perfect ratio of ingredients. And let me tell you… this was a hit with my kids! They asked for seconds, which never happens this early in the morning.

It’s the kind of breakfast that’s made for chilly fall mornings here in New Jersey — especially paired with a hot mug of tea or coffee. It feels indulgent, but it’s secretly packed with protein and whole grains. Win-win.

You can easily make this your own with different spices, nuts, or even a bit of pumpkin (which I’ll definitely try next time now that I know my kids love it).

Fall Apple Protein Breakfast Bake

Serves: 8–10  Prep: 10 min  Bake: 30–35 min

Ingredients

  • 6 medium apples, peeled and chopped or thinly sliced
  • 2 tbsp butter or coconut oil, melted
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground ginger (optional)
  • 2 tbsp brown sugar or maple syrup
  • 2 cups Kodiak pancake mix (buttermilk or cinnamon oat)
  • 1½ cups milk (Fairlife or almond milk)
  • 2 eggs
  • 1 tsp vanilla extract
  • Optional: ¼–½ cup chopped pecans or walnuts

Directions

  1. Preheat your oven to 350°F. Grease a 9×13 baking dish generously with butter or oil spray.
  2. In a large bowl, toss the apples with melted butter, cinnamon, nutmeg, ginger, and sweetener until evenly coated.
  3. Spread the apple mixture evenly into the prepared baking dish.
  4. In a separate bowl, whisk together the Kodiak mix, milk, eggs, and vanilla until smooth.
  5. Pour the batter evenly over the apples (don’t mix — just let it gently spread).
  6. Sprinkle with chopped nuts if you’re using them.
  7. Bake for 30–35 minutes, until golden on top and a toothpick comes out clean from the center.
  8. Let it cool for 5–10 minutes before serving.

Serving Ideas

  • Drizzle with warm maple syrup or almond butter.
  • Top with a dollop of Greek yogurt for added protein.
  • Store leftovers in the fridge for up to 4 days — reheat in the microwave or oven for a quick breakfast all week.
